Albacore Tuna Crudo

Ingredients
โข 1 lb albacore tuna, diced
โข 1 cup English peas, blanched
โข 1 small fennel bulb, shaved thin
โข 2 Tbsp mint, chiffonade
โข 1 lemon, zest and juice
โข 1/4 cup olive oil
โข Kosher salt
โข Black pepper
Method
1. Blanch peas in heavily salted water until just tender. Shock in ice water and drain well.
2. Combine lemon juice, lemon zest, olive oil, salt, and pepper to make the dressing.
3. Toss diced tuna gently in the dressing. Marinate under refrigeration for 5-10 minutes.
4. Fold in peas, shaved fennel, and mint just before serving.
5. Taste and adjust seasoning as needed. Serve immediately, well chilled.
Note: Do not marinate longer than 10 minutes or the acid will begin to cure the fish.
